Fresh Salsa

We love us some fresh salsa around here. It is especially good in the summer when we can use tomatoes, onions and peppers from the garden, but during the year when we can't wait any longer we buy store bought stuff (blah) and make up a big batch of salsa to go with all the mexican food we eat.

This recipe comes after lots of experimenting and originally came from Mimi Meadows.






Fill your food processor pretty full with fresh tomatoes (romas work best because they're not as juicy - canned tomatoes even work after draining)

Throw in a jalepeno or two or three depending on how spicy you like

Throw in about a 1/2 red onion

Use scissors to cut off about a 1/2 bunch of fresh cilantro

Liberally sprinkle salt and ground pepper
A couple splashes of white vinegar

A splash of lime juice

Process til desired consistency. Taste and tweak as needed. If you want a little kick throw in some tabasco or green pepper sauce.
The Christmas before last I cooked and canned the salsa for Christmas gifts. Another great way to enjoy it during the year!
