Today Was One of Those Days . . .

You know those days when you should have just sent your kids back to bed, you go to bed then get up and try to start over? (thanks Mimi for the advice) We had one of those. Was it Mommy that was cranky that made the kids cranky or visa-versa? Who knows, but Satan sure uses days like this to get you down where you hurt the most. It was just one of those days. Our main goal today was for Mommy not to scream (out loud). We made it through and that’s all that really matters. Tomorrow's a new day praise God!

The boys made their own jets. I thought they were very creative and was proud of them for thinking of this on their own.

I got some yummy Sweet Potato Orange Bread made. I change my recipes so much that I’ll just have to post instead of sending you a link.

Just 3 cups shy of whole wheat flour
4 t. baking powder
1 t. cinnamon
¼ t. nutmeg
½ c. brown sugar (not packed)
½ c. splenda
2 eggs
1 c. unsweetened apple sauce
½ c. fresh O.J.
A bit of orange rind
2 c. mashed sweet potato
Bake at 350 degrees in sprayed muffin tins or loaf pan.
It was divine! (Keep in mind that cooking with pure whole wheat flour does leave baked goods more dense.)

Also made some yummy calzones for dinner.

I just use my favorite homemade pizza crust recipe (I made a double batch to freeze half for the pizza I will make next week). Roll and cut into sections.

Top with a mixture of turkey ham, cheese, ranch dressing and veggies (slightly steamed in micro. and drained). Fold over and crimp with fork. Bake at 350.

Big hit at our house!

Why did I not think of using our pizza dough recipe for calzones. Slap on my forehead, duh. Thank you. And I'm so proud of you for not yelling out loud. Your insides must have been screaming. I on the other hand yelled out loud today. Tomorrow is a new day, thank you God.

LOL! Your dad is funny! Loving the calzones, going to have to make it. I make pizza dough in my bread machine, because I'm lazy. Glad to know you have days like that too. My oldest probably won the award for most fits thrown in one day today. Going to have to try your bread. I saw a really fun paper airplane making kit at the store, it was kind of like a scrapbook kit for paper airplanes. Can you tell I write stream of consciousness most of the time? Oh and we need to get together some time. Can't let Donna hog you all the time. LOL!

I have days like that too...with my own kids...not the daycare kids.
Thanks for posting the recipe. :)

The calzones look yummy! Jonathan would love those!

Love the airplanes. Did I tell you about Seth's invention? He glued a popsicle stick between a paint brush and a pencil. The sharp end on the pencil down on one end the brush on the other. He made it for ME! So, I wouldn't always have to find my pencil or brush when I am drawing and painting. I will keep it FOREVER!

We had the same day yesterday. I yelled at my precious princess, then she got sick. enter... guilt! But you already know about all of that! ;)
